Banana Coconut Chia Pudding

Hey All! I know I've been MIA; More so, missing in Germany and Bulgaria for an entire month! I wasn't able to get to my computer and I'll explain why in a different post coming soon. In the meantime, check out this great new recipe I've discovered.

Who Doesn't Love Pudding?

I am a BIG fan of rice pudding but the dairy doesn't sit well with my stomach and on top of that I've been trying to stay on a low carb diet. Chia seed pudding is a tasty and healthier alternative to the typical greek rice pudding dessert. 

Chia seeds are rich in fiber, omega-3 fats, protein, vitamins, and minerals. Some of the vitamins chia seeds hold are vitamins A, B, D, and E. Not only are they rich in vitamins, but they are a great source antioxidants. Who knew something so healthy could be this good!



3/4 Cup Chia Seed

2 Cups Coconut Milk

1 TBSP Cinnamon

1 Banana

1/4 Raspberry

1/4 Blackberry



Step 1:

Mix everything but the chia seeds in a blender  


Step 2:

Spread the 3/4 cup chia seeds evenly between 3-6 small bowls


Step 3:

Pour the blended mix evenly between the 3-6 cups and make sure to stir each cup so that the chia seeds aren't in clumps


Step 4:

Put the pudding mix in the fridge for 1-2 hours

Step 5:
